保羅傑酒莊來自於法國香檳區的阿依（Aÿ），創立於1849年 Epernay，在短短的半世紀裡隨即嶄露頭角，成為最負盛名的香檳酒商之一。歷經五代傳承160年的歷史至今，現由家族第六代－ Hubert de Billy 領導。酒莊擁有綿延七公里、深達地下三層的酒窖裡，隨時儲有750萬瓶香檳正在進行熟成。產量方面，相較香檳區的大酒廠雖並不算大，然而酒莊之名氣聲望，在香檳區卻名列前矛。
酒莊與英國皇室的交誼相當深厚，前首相邱吉爾最愛的香檳，就屬 Champagne Pol Roger。酒莊甚至在1984年推出一款以首相邱吉爾而命名的香檳---Cuvée Sir Winston Churchill。英國皇室查爾斯王子婚宴也使用保羅傑香檳。

The current release of Pol Roger's NV Brut Réserve is quite dramatic, bursting with aromas of mandarin oil, honeycomb, elderflower, fresh bread and musky peach. Medium to full-bodied, fleshy and enveloping, it's generous and textural, with a rich core of fruit, lively acids and a pillowy mousse.

A complex, reliable Champagne that would show well in all occasions thanks to its freshness and class. Drawing on all three grapes (chardonnay, pinot noir and pinot meunier), this has a complex grilled-nut and autolysis character overlayed across red berries and citrus fruits. Definitely a lot of reserve wine character here. The palate delivers lemons, grapefruit, peaches and mangoes in a refreshingly pure, fleshy style.
